Shrimp Tacos with a Cilantro and Lime Chipotle Ranch Sauce

Once I got the man and the baby, I had to learn to cook. Oh gosh. I used to find every excuse not to help my mama in the kitchen when I was younger. I told everybody me and my husband were going to be rich and have a chef and a maid (I hate cleaning). Well I had no idea that the way to be rich was going to be long and hard. I still haven't gotten there but I will.

In the meantime I've had to learn the kitchen and experiment with different recipes. I started with the basics that I grew up eating- macaroni&cheese, fried chicken, lasagna, tacos- there was a lot of calling my mom asking for the recipe and step-by-step instructions. 

Finally I got the basics down pack. Now I experiment with new recipes I find online and on Youtube. She has plenty of other recipe videos and the ones I've tried were FABULOUS. 

Now besides pizza, I love Mexican food. Tacos, enchiladas, quesadilla, mostly everything Mexican, besides Spanish rice it has no flavor to me. I was known as the quesadilla girl by my boyfriend when we were dating and I would always cook it for him. So last night I decided to make my usual tacos, with ground turkey, but wanted something different for me. I was craving shrimp tacos. I wanted to try for the first time making a cilantro lime chipotle ranch sauce. I was nervous, but it turned out perfect, not too spicy with enough flavor and lime juice. Even babygirl had some. So I decided to share the recipe with others. Isn't that what we do when something is just so good. 

Here it is Shrimp tacos with a cilantro and lime chipotle ranch sauce!

 

Ingredients:

1 pound of shrimp (I used large but you can use whatever size you want, 16 of them made 4 tacos)

1 TBS olive oil

Seasonings- i used lemon pepper, cajun, and Ancho chile powder (you can use whatever you have in the cabinet)

1 Avocado

1 pack of small tortillas

Pico De Gallo:

1/2 of a red onion DICED

1/2 of a red pepper DICED

1 small tomato (I used a whole Roma tomato) CHOPPED

cilantro CHOPPED

1 TBS of lime juice (half of a lime)

 

Cilantro Lime Chipotle Ranch sauce:

Cilantro CHOPPED

1 TBS of lime juice (half of a lime)

3/4 cup of Ranch dressing ( I used a local refrigerated brand)

1 can of Mexican Chipotle chiles

 

Optional:

Monterey Jack shredded cheese

shredded lettuce or cabbage

grated parmesan cheese

 

Instructions:

It's easier if you cut up your veggies first, onion, pepper and tomato. Put into a bowl. Roughly chop up the cilantro. Put that in the same bowl. Take your half of a lime and squeeze over the bowl of veggies and cilantro. Cover with plastic wrap and put into the refrigerator. Cut up your avocado and put to the side.

Next, take your defrosted shrimp and season with lemon pepper, cajun seasoning, and Ancho chile powder. Toss to coat all the shrimp. I think I used approximately 1 tsp of each, but add a pinch more to be sure it's seasoned enough. 

To make the cilantro and lime chipotle ranch sauce, mix the sauce from the chipotles (not the peppers themselves), the ranch sauce, and the cilantro. Squeeze in the lime juice. Cover with plastic wrap and set in the refrigerator.

Heat a skillet with olive oil, not too hot or it'll burn the shrimp. Add the shrimp and cook for 2-3 minutes per side. You will know the shrimp is thoroughly cooked when it turns from white to pink. Once the shrimp is done, remove from pan onto a paper towel to drain the oil.

Add more olive oil to the pan, add a tortilla and fry for 10-15 seconds per side so it'll crisp up but not too hard so you can still fold it. Remove and drain on a paper towel. 

Assemble your taco. You can add cheese if you want. I added monterey jack cheese at the bottom of the taco. Then add your shrimp, avocado, lettuce, pico de gallo, and cilantro lime chipotle ranch sauce on top. Sprinkle parmesan cheese on top. Garnish with more cilantro. 

There you have it. Once you cut everything up, everything else is simple and easy. Takes about 30 minutes from start to finish.
